A pool deck is the paver surface with the most constraints on it. It is walked on barefoot, so surface temperature matters. It is walked on wet, so slip resistance matters. It has to shed water away from the pool rather than carrying deck debris and chemicals back into it, so grading and drainage are design decisions rather than afterthoughts. And it usually meets coping, which is its own material and its own detail.
Dark pavers in direct San Diego sun get genuinely uncomfortable barefoot. Lighter and heat-reflective products, and porcelain or travertine rather than dark concrete, run measurably cooler. This is the decision people most often regret making on a colour chip indoors rather than on a sample left outside in the afternoon.
Water has to leave the deck without going back into the pool and without pooling at the coping. That usually means a deliberate fall away from the water, often a channel drain on the low side, and a discharge point that goes somewhere legitimate. On a deck that connects to a patio or the house it becomes a coordination problem across the whole rear yard.
The edge detail at the water is a different product, cut and set differently, and it is where the workmanship shows most. Bullnose coping, a cantilevered edge or a stone cap each price differently from the field pavers, and replacing coping on an existing pool is more involved than replacing deck.

Lighter colours, in materials that do not hold heat. Travertine has a long-standing reputation for staying cooler underfoot, and porcelain and heat-reflective concrete products are formulated with the same aim. The general rule holds regardless of product: the darker the colour and the denser the surface, the hotter it will be in afternoon sun. Ask for a sample and leave it outside for an afternoon before committing — it is the most reliable test there is.
Less so than a smooth troweled concrete deck, because the joints break up the surface and most pool-suitable pavers carry a textured finish. Slip resistance still varies by product, and it is worth asking for the manufacturer's figures rather than assuming. Polished or highly smooth finishes belong indoors, not around water.
Sometimes, but it needs a real assessment. The slab must be sound and draining correctly, and the finished surface will rise by the paver plus setting bed — which changes the relationship to the coping and the waterline and can create a trip edge at doors and the pool edge. Where the existing deck has settled or drains toward the pool, overlaying it locks the problem in place. Removal and a proper base is often the better answer.
It can. California pool safety requirements are measured from the walking surface, so raising the deck level changes the effective height of an adjacent barrier and the clearance beneath a gate. If the deck level is changing near a fence or gate, have the barrier re-checked against current requirements as part of the design rather than after the work is done.
